Roasted Grape Tomatoes
Ingredients Procedure

2 pints grape tomatoes, cut in 1/2
2 tbsp. garlic, chopped
1/4 cup chopped herbs (basil, thyme, oregano, & rosemary mixed)
1/4 cup olive oil
Salt & pepper

Cut tomatoes in 1/2, chop garlic and chop herbs.

Pre-heat over to 200ºF.

Toss All ingredients together. Place a wire rack on a baking sheet. Place tomatoes, cut side up on rack. Put in oven and cook for 20 -30 minutes. check. Tomatoes should shrivel, but not get much color. Roast longer if needed. Remove and let cool.
